Lund is surrounded by the richest farmland in the country, and we explore nearby islands and meet entrepreneurs making highly-regarded local products. Tareq takes the ferry out to Bornholm, a Danish island that has seen its share of invaders and reluctantly took part in WW2. The islanders are fiercely self-sufficient and this attitude reflects in the huge number of food producers making products that are sold both locally and internationally.

Far above the Arctic Circle, Tareq explores the wild country around Jokkmokk. Jokkmokk is a town steeped in the traditions of the Sami, Sweden's indigenous people. Their adaptation to what the land provides has meant the cuisine they eat is as extreme as the weather.

Tareq is in his hometown of Malmö - Sweden's third largest city. Built up on the backs of the herring in the sea, the town is now a centre of culture and technology with a bridge connecting it to Copenhagen. The food scene here is inspired by the traditional seafood dishes and the large immigrant population whose recipes have given Malmö a new energy.

Tareq heads into this winter wonderland to see the curious cuisine that has developed in western Norway.

Tareq arrives in Kiruna, over 200km north of the Arctic Circle. With the weather getting down to -30C, this does not deter the locals to be outside for sport and food preparation. Tareq takes part in snow picnics, firing up the smoker, and using snow and ice as part of the recipes he prepares.

Tareq comes to understand what is in the soul of the Faroese, and why their cuisine has developed the way it has. We explore the beautiful capital Torshavn and surrounding villages, and sail into a cave for a recipe prepared on a rowboat.

Tareq pays a visit to the western part of Denmark, where he explores the region called Midtjylland. Volcanoes and glaciers shaped this part of the country, leaving a giant fjord and pre-historic fossils in their wake. Farmers and food innovators work closely with nature to prepare food with the area's plentiful herbs and award-winning seafood.

At the northern-most part of Denmark, you are always close to raw, beautiful nature, and incredible sunlight that has drawn artists here for over 100 years. Tareq visits a salt maker using medieval techniques, an aquarium where he gets up close to the fish, and the town of Skagen, considered one of Denmark's most beautiful towns.

East Denmark contains some of Denmark's most fertile lands, and many formerly traditional farmers are converting to organic production and winning awards for their specialist cheeses and wine. Tareq bikes through the area to visit limestone cliffs, try some tree climbing and stop by a Viking ship heading out into the fjords.

Kemi is situated in northern Finland by the Bothnian Bay and it is part of Lapland region. Tareq trys his luck at a spot of burbot fishing on the frozen sea, then travels to see the enchanting snow castle hotel which the local residents have built every year for the past twenty years.
